Sweet & Sour Abalone

Ingredients Quantity
Mixed capsicum 200g
Pineapple 400g
Abalone 200g
Fresh Ginger 20g
Cake flour 150g
Corn starch 20g
Baking Powder 5g
White Pepper 5g
Fine Salt 5g
Water 200ml
Sauce
Tomato sauce 30ml
Plum sauce 15ml
Oyster sauce 15ml
Sugar 30g
Water (for sugar water mix) 45ml
White Sesame seed 2g

Directions

  1. Slice the Abalone in strips.
  2. Cut the capsicum in cubes, finely chop the ginger.
  3. Mix all the dry ingredients together. Slowly add water until you have a nice, thick batter.
  4. Deep-fry the Abalone until golden brown and set aside.
  5. Mix the tomato sauce, plum sauce, oyster sauce, sugar and water together.
  6. In a saucepan add ginger and mixed capsicum for a minute or two.
  7. Add sauce until thick, then add the battered Abalone to the mix.
  8. Stir-fry quickly and dish on the plate, sprinkle sesame on top.
